03.28.14Recipe | “Skinny” Piña Coladas

When I first got my Vitamix, my friend Ashley and I dabbled in piña coladas when she came to visit. I can’t remember exactly what we did to make them, but when Rob and I recently went to Mexico, I had a few more sips of that decadent drink. “All-inclusive” means you rack up a few piña coladas! Anyhow, I decided I needed to bring that piece of vacation home with me, but minus all the sugary syrups that transformed into a few added pounds. What I came up with isn’t exactly healthy, but I think it surely beats the sugar/syrup drinks from Mexico. And heck, you get a serving of fruit – right, Mom?! Here’s what I came up with – only four ingredients!

What you need:
7 oz. lite coconut milk (mine is Thai Kitchen brand from Harris Teeter)
1 shot of rum
3/4 cup of low-fat, no sugar added vanilla ice cream
1/2 pound frozen pineapple tidbits (I got mine at Trader Joe’s)

What you do:
Fill Vitamix with ingredients listed (in the order they’re listed). Slowly increase Vitamix speed to around 7 for 20 seconds or so – or until desired smoothness. Mine came out the consistency of a milkshake. If you want yours slushy-like, add ice to the concoction. This recipe serves one tall piña colada or two medium-sized drinks!
