While this “recipe” has been all the rage in food trends and on brunch menus recently, I wasn’t sure if I’d like it or not. However, Rob and I have been on an avocado kick lately, especially after reading about all the health benefits of avocados. So for a Sunday breakfast, I decided to make us toast for two: avocado style. The verdict? We both absolutely loved it. First of all, it’s incredible simple if you have a ripe avocado on hand. Second of all, it’s incredibly delicious and filling. Try it for yourself!
What you need:
1 ripe avocado, sliced
Pinch of crushed red pepper
Pinch of coarse salt
1 slice of whole grain bread for each person
What you do:
Toast your whole grain bread until desired crispiness. Slice avocado thinly. Click here for a great tutorial on getting perfect slices from an avocado. Layer slices onto bread, then top with crushed red pepper and coarse salt to suit your taste. That simple!
