02.24.14Breakfast for Dinner

I must admit — breakfast foods are among my favorite foods ever, but I rarely indulge in them… mostly because I only wake up with enough time to get ready for work and run out the door. What can I say? I love my sleep even more ;-). But I also think of breakfast foods as a treat, so when I eat it, it’s all the more special. In fact, ever since we moved to Charlottesville and unwrapped our gifted waffle maker that was a wedding gift, we have made waffles every single Saturday morning that we’ve been in town. I love falling asleep on Friday nights knowing what we have to look forward to in the morning :).

There are about 15 or so “partners” as we’re called (wives, husbands, girlfriends, boyfriends, fiances of Darden students), who get together on Wednesday nights for potluck and hang-out time while our “students” are busy at their nightly Learning Teams. We rotate houses and all meet up at 7 with food and drinks to share. It came my turn to host, and I thought a “Breakfast for Dinner” theme would be a nice change of pace to the usual heavy hors d’oeuvre that we normally have. Plus, it might create a more comfy/casual vibe if we’re all dressed down and cozy.

While I whipped up Belgian waffles (with my secret ingredients!) and mimosas, my friends brought everything from banana-nutella crepes to fruit salad to parfait to quiche to muffin-donuts. It easily became the best breakfast spread possible. Such a fun way to host my Charlottesville friends for a night at our place.
